At Braise on the Go we offer one-of-a-kind traveling culinary classes at a variety of locations, including farms, orchards and inns. Enjoy pristine al fresco settings while learning new recipes, techniques, and ideas using the freshest ingredients possible from the local Wisconsin landscape.

We will showcase fresh products from each farm we visit, learning how to grow and harvest these exceptional ingredients directly from the producers. Farm tours will precede cooking demonstrations by Chef David Swanson using freshly harvested ingredients.

Class Structure

Braise on the Go classes are created to compliment the seasons.  We will focus on locations that reinforce this idea. The relaxed class format is a natural companion for learning new recipes, techniques and ideas.

While each class is unique, the basic class structure will be a thirty minute tour of the farm or facility, followed by a two hour cooking demonstration. Students will receive copies of all recipes and an ample amount of food samples. Beverages which compliment the samples provided.

The number of students will range from 10 to 20, depending on location and type of class offered.

What to Wear

Please dress in weather appropriate clothing for classes held outside. Closed-toed shoes are recommended for the farm tour. Class is held rain or shine, but will be cancelled for hazardous weather conditions.
